The most popular tea in Japan, Sencha has a unique processing method where freshly picked leaves are steamed before drying, rather than withered first like Chinese teas. The leaves are then heated to remove excess moisture and rolled into a needle shape. A blend of the Yabukita and Yutakamori tea variety, this batch comes from Kagoshima, Japan where the tea bushes are covered with a screen to increase chlorophyll production for a more balanced flavor.
